Ingredients

4 cups chiura (beaten rice)
200g choila (spiced grilled meat)
2 boiled eggs, halved
1/2 cup roasted soybeans (bhatmas)
Aloo achar (spiced potato), a small piece of dried fish (optional)
Green achar and fresh ginger slivers
Salted lassi or aila to accompany

Instructions

1Prepare each element separately: grill the choila, boil the eggs, roast the soybeans.
2Make the aloo achar by tossing boiled potato with sesame, chilli and lemon.
3Arrange a mound of chiura on each plate.
4Place choila, egg halves, bhatmas, aloo achar and ginger around the chiura in the traditional layout.
