Ingredients

• 3 cups cooked rice, cooled (day-old is best)
• 2 eggs, scrambled
• 1 onion, 1 carrot, 1/2 cup peas
• 2 garlic cloves, 1 tsp ginger, 2 green chillies
• 1/2 tsp turmeric, 1/2 tsp cumin, 2 tbsp soy sauce
• 2 tbsp oil, salt, spring onion, lemon wedge

Instructions

1. 1Scramble the eggs in hot oil; set aside.
2. 2Stir-fry garlic, ginger, chilli and onion; add carrot and peas.
3. 3Add the rice, breaking up clumps; toss on high heat.
4. 4Season with turmeric, cumin, soy and salt; return the egg and toss.
5. 5Serve hot with chicken chilli or achar and a squeeze of lemon.
