Chatamari in Australia

Ingredients

• 2 cups rice flour
• Warm water for a thin crepe batter
• 250g minced buff or chicken
• 1 onion, 2 garlic cloves, 1 tsp ginger, minced
• 1 tsp cumin, 1/2 tsp turmeric, salt
• 2 eggs (optional, Newari style)
• Chopped tomato and coriander to top

Instructions

1. 1Whisk rice flour and water into a thin, pourable batter.
2. 2Mix the mince with onion, garlic, ginger and spices.
3. 3Heat a lightly oiled non-stick pan; pour a ladle of batter and swirl into a thin round.
4. 4Spread the mince topping (and a cracked egg if using) over the crepe; cover and cook 4–5 minutes until the base is crisp and the topping is cooked.
5. 5Top with tomato and coriander; slide onto a plate and serve hot — cut like pizza.
