Ingredients

  • 2 litres full-cream buffalo milk (or rich cow milk)
  • 1/2 cup sugar
  • 3 tbsp plain yoghurt culture
  • Clay pots for setting (traditional)

Instructions

  1. 1Boil the milk, then simmer gently until reduced by about a quarter — this makes dhau thick.
  2. 2Stir in sugar off the heat and cool until warm to the touch (about 42°C).
  3. 3Whisk in the yoghurt culture and pour into clay pots.
  4. 4Wrap warm and leave undisturbed overnight to set.
