About Sukuti

Sukuti is dried meat — usually buff, goat or lamb — that has been sliced, spiced and air-dried until hard, then rehydrated and cooked in curries or tossed sadeko-style with onion, chilli, tomato and mustard oil. Originally a way to preserve meat in the hills before refrigeration, sukuti is now a beloved snack in its own right, often ordered alongside drinks in Nepali restaurants and prepared at home from grocery-store packets.

How to Make Sukuti

Ingredients

  • 300g dried sukuti (buff or goat)
  • 1 onion, thinly sliced
  • 2 tomatoes, chopped
  • 3 green chillies, sliced
  • 1 tbsp ginger-garlic paste
  • 2 tbsp mustard oil
  • 1 tsp cumin powder, 1/2 tsp timur, chilli flakes
  • Coriander leaves and lemon juice

Instructions

  1. 1Soak the sukuti in warm water 15 minutes to soften; squeeze dry and shred or chop.
  2. 2Fry briefly in mustard oil with ginger-garlic until fragrant.
  3. 3For sadeko-style: toss off the heat with onion, tomato, chilli, cumin, timur and raw mustard oil.
  4. 4For curry-style: add tomato and a little water; simmer 10 minutes.
  5. 5Finish with coriander and lemon — serve with chiura or as a snack.
