About Jhol Momo

Jhol Momo is Kathmandu's favourite way to eat momos — steamed dumplings submerged in a thin, tangy soup made from tomatoes, roasted sesame seeds, dried chillies and timur. The word jhol means liquid or gravy, and the sauce is the star: nutty from sesame, sour from tomato, and spiced just enough to warm without burning. It started in Kathmandu's momo houses and is now the most requested momo style in Nepali restaurants across Australia.

How to Make Jhol Momo

Ingredients

24 steamed momos (chicken, buff or vegetable)
4 ripe tomatoes, roasted or boiled
3 tbsp sesame seeds, toasted
2 dried red chillies, toasted
1 tbsp ginger-garlic paste
1/2 tsp timur (Sichuan pepper), 1/2 tsp cumin
2 cups warm water or light stock
Salt, coriander leaves, 1 tbsp mustard oil

Instructions

1Blend the roasted tomatoes, sesame seeds, chillies, ginger-garlic, timur and cumin with water into a smooth thin sauce.
2Simmer the sauce 10 minutes; season with salt and a little mustard oil — it should pour like soup, not gravy.
3Steam or reheat the momos.
4Place momos in deep bowls and ladle the hot jhol generously over them.
5Garnish with coriander and serve immediately — the momos should be swimming.
