About Pani Puri

Pani Puri (also called golgappa or phuchka) is a popular street food snack consisting of small crispy hollow puris filled with a mixture of spicy, tangy tamarind water, chickpeas, potatoes, and chutneys. While originating from India, pani puri is extremely popular in Nepal and is found in many Nepali restaurants and food trucks in Australia.

How to Make Pani Puri

Ingredients

30 ready-made puris (or puri dough of semolina and flour, fried)
2 boiled potatoes and 1 cup boiled black chickpeas, for the filling
1 cup mint-coriander chutney and 1/2 cup tamarind chutney
1 tsp chaat masala, roasted cumin powder, salt, chilli
Cold water for the pani; lemon juice
Finely chopped onion and coriander to top

Instructions

1Blend mint, coriander, green chilli and lemon with cold water for the spicy pani; chill.
2Make the tamarind water by diluting tamarind chutney; chill separately.
3Mash the potato with chickpeas, chaat masala, cumin and salt for the filling.
4Crack the top of each puri, fill with the potato mixture and a little onion.
5Dip into the chilled pani and eat immediately, whole.
