Thakali Khana in Australia

Ingredients

• 2 cups steamed rice
• 1 cup dal (masoor or black lentils)
• 500g goat or chicken curry (khasi ko masu)
• 200g saag (spinach or mustard greens)
• Aloo achar and tomato achar
• Papad, dahi, and 2 tsp ghee
• Jimbu and timur for seasoning

Instructions

1. 1Cook the dal with turmeric; temper with ghee, garlic and jimbu.
2. 2Prepare the meat curry with onion, tomato, garam masala and timur until tender.
3. 3Wilt the saag with garlic and a little oil; season simply.
4. 4Make the aloo and tomato achars fresh — Thakali cooking is known for clean, balanced spicing.
5. 5Serve everything together on a plate around a mound of rice, with ghee melted on top and papad and dahi on the side.
