Chicken Chilli in Australia

Ingredients

• 600g chicken thigh, cubed
• 3 tbsp cornflour and 1 egg for the coating
• 1 capsicum and 1 onion, cut into petals
• 6 garlic cloves, 4 green chillies, 1 tbsp ginger
• 3 tbsp soy sauce, 1 tbsp chilli sauce, 1 tsp vinegar
• Oil for frying; spring onion to finish

Instructions

1. 1Coat the chicken in egg and cornflour; deep-fry or shallow-fry until crisp and golden.
2. 2In a hot wok, stir-fry garlic, ginger, green chilli, capsicum and onion — keep them crisp.
3. 3Add soy, chilli sauce and vinegar; toss for 30 seconds.
4. 4Add the chicken, toss to coat on high heat and serve immediately with spring onion.
