About Sadeko

Sadeko is the Nepali technique of tossing cooked ingredients with mustard oil, onion, tomato, green chilli, coriander, lemon and spices — served cold as a snack or side. The most common versions are aloo sadeko (potato), bhatmas sadeko (roasted soybeans) and sukuti sadeko (dried meat), but almost anything can be made sadeko. It appears on nearly every Nepali restaurant appetiser menu in Australia.

Ingredients

  • 2 boiled potatoes, cubed (for aloo sadeko) — or roasted soybeans / soaked sukuti
  • 1 onion and 2 tomatoes, finely chopped
  • 3 green chillies, sliced
  • 3 tbsp mustard oil
  • 1 tsp cumin powder, 1/2 tsp turmeric, chilli flakes
  • Lemon juice, salt, coriander

Instructions

  1. 1Prepare the base ingredient — boil potatoes, roast soybeans, or soak and shred sukuti.
  2. 2Heat half the mustard oil; sizzle the cumin and chilli briefly, cool slightly.
  3. 3Toss the ingredient with onion, tomato, chilli, turmeric and the tempered oil.
  4. 4Add raw mustard oil, lemon and salt to taste; rest 10 minutes for flavours to meld.
  5. 5Serve cold or at room temperature as a snack or side.
