About Kheer

Kheer is rice slow-cooked in milk with sugar, cardamom, cashews and raisins until thick and fragrant — Nepal's everyday dessert and a required dish at pujas, birthdays and Shrawan fasting days (kheer khane din). Served warm or chilled, it is the gentle sweet that ends most Nepali set meals. Restaurants in Australia list it simply as kheer or rice pudding.

How to Make Kheer

Ingredients

  • 1.5 litres full-cream milk
  • 1/2 cup basmati rice, rinsed
  • 1/2 cup sugar
  • 1/2 tsp cardamom powder
  • 2 tbsp chopped cashews and almonds
  • 1 tbsp raisins, pinch of saffron (optional)

Instructions

  1. 1Boil the milk in a heavy pot, then add the rice.
  2. 2Simmer on low 30–35 minutes, stirring often and scraping the sides, until the rice is soft and the milk has thickened.
  3. 3Add sugar, cardamom, nuts and raisins; cook 5 more minutes.
  4. 4Serve warm, or chill — kheer thickens further as it cools.
