  • 1/2 tsp timur (Sichuan pepper), 1/2 tsp cumin
  • 2 cups warm water or light stock
  • Salt, coriander leaves, 1 tbsp mustard oil

Instructions

  1. 1Blend the roasted tomatoes, sesame seeds, chillies, ginger-garlic, timur and cumin with water into a smooth thin sauce.
  2. 2Simmer the sauce 10 minutes; season with salt and a little mustard oil โ€” it should pour like soup, not gravy.
  3. 3Steam or reheat the momos.
  4. 4Place momos in deep bowls and ladle the hot jhol generously over them.
  5. 5Garnish with coriander and serve immediately โ€” the momos should be swimming.
