How to Make Thukpa

Ingredients

  • 300g noodles (hand-pulled or wheat noodles)
  • 200g chicken or buff pieces (or mixed vegetables)
  • 1 onion, 2 tomatoes, 4 garlic cloves, 1 tbsp ginger
  • 1 carrot and a handful of spinach or bok choy
  • 1 tsp turmeric, 1 tsp cumin, 1 tsp timur, chilli flakes
  • 1.5 litres chicken or vegetable stock
  • 2 tbsp oil, salt, coriander leaves

Instructions

  1. 1Sauté onion, garlic and ginger in oil; add tomatoes and cook down.
  2. 2Add meat and spices; brown 5 minutes.
  3. 3Pour in the stock, simmer 15 minutes until the meat is tender.
  4. 4Add noodles, carrot and greens; cook 4–5 minutes until noodles are just done.
  5. 5Adjust salt and chilli; serve steaming hot garnished with coriander and a squeeze of lemon.
