Ingredients

  • 600g buff, chicken or duck meat
  • 3 tbsp mustard oil
  • 1 tbsp ginger paste, 6 garlic cloves
  • 1 tbsp roasted cumin powder, 1 tsp fenugreek seeds
  • 2–3 fresh green chillies, sliced
  • 2 tbsp chopped garlic chives or spring onion
  • Salt; beaten rice (chiura) to serve

Instructions

  1. 1Grill or boil the meat until just cooked; cool and cut into thin strips or small cubes.
  2. 2Toss with ginger, garlic, green chilli, cumin powder and salt.
  3. 3Heat mustard oil, fry the fenugreek seeds until dark, pour the sizzling tempered oil over the meat.
  4. 4Add mustard oil raw to taste, mix in the chives and rest 15 minutes.
  5. 5Serve at room temperature with chiura — no reheating needed.
